Blue Mountains Highland Honey is a family-owned and operated honey farm where we source our raw, cold-extracted, 100% Australian honey. 
 
Honey can be used to help lighten the body of the brew and raise the ABV or add a light honey flavour to your brew. 
Raw Honey also retains its vitamins, antiseptic qualities, and nutrients as opposed to heat-treated and filtered honey found in supermarkets.
 
 Orange Blossom
Has a strong floral taste with a bright hint of citrus with an aroma like marmalade with slightly citric tones.
 
 Stringy Bark
A stronger, well-rounded flavour with a fresh caramelly, and warm woody scent. 
 
 Eucalyptus Wildflower
Sweet tasting with slightly acidic and salty undertones with a damp wood aroma. 
 
 Grey Box
Rich, mellow tones in the mouth with a slight caramel aftertaste with a sweet aroma. 
 
Yellow Box Clover Wildflower
A unique combination of 3 types of varietal honeys. Floral and fruity flavour accompanied by fragrant Australian bush flowers and clover.
